So Chris has been stopping at Maverik every morning for a breakfast sandwich and to fill his mug, which costs $3.28 anyway, that is not really in our budget, and we had a whole bunch of hashbrowns in our freezer (another story) and I found this recipe and thought I would share.
Ingredients:
1 Tbsp. olive oil
6 slices canadian bacon, cut into small pieces (I used bacon cut up)
2 cups frozen hash brown potatoes, thawed and drained
8 eggs
1/2 cup salsa
16 (6") tortillas
1 cup shredded Pepper Jack Cheese (I used Weight Watchers mexican blend)
Preparation:
In large skillet, heat olive oil and brown bacon and has browns. In large mixing bowl, combine eggs and salsa; beat well until combined. Pour into skillet with bacon and potatoes and cook over medium heat, stirring occassionally, until eggs are set. Spoon egg mixture into flour tortillas, sprinkle with cheese, and roll us. Place roll-ups in freezer bags and freeze.
When ready to serve, place burrito in microwave, covered with a paper towel, and heat for about 1-2 minutes on high power for each burrito.

Those actually sound really good, but it looks like it actually involves doing stuff...in the morning...
I actually just made them in the afternoon and froze them, and Chris just has to grab them....because I do not do stuff...in the mornin...
did you use the tortillas from costco? I am so going to try this when I get motivated.
I just used regular tortillas, because I didn't want to cook every single one.
